Waste less - Save moreIn 2014, City of Canada Bay was awarded a ‘Love Food Hate Waste’ grant by the NSW Environment Trust to run the ‘Waste less - $ave more’ project: Helping businesses find out more about their food waste, and save money by reducing it.
The project has three main components:
- A food waste study
- New multilingual resources providing ideas and tips to help businesses reduce their food waste
- A short film where food business owners share their tips to avoid food waste.
‘Waste less - $ave more’ food waste study
18 local businesses who are serious about avoiding food waste have signed up to be part of our study.
How does the study work?
We have asked businesses to separate and weigh their food waste for a week. Dividing food waste into three streams:
- Spoilage: food that is thrown away before it is used, as it is damaged or out of date
- Prep waste: waste generated in the food preparation process e.g. peels and trimmings
- Plate waste: food that is left on customers’ plates.
They also complete a checklist to indicate steps they are already taking to minimise food waste. Together we review the completed checklist and food waste data and identify new food waste avoidance ideas to try within the business. After the business has implemented the new ideas, they re-measure their food waste for another week and we calculate any savings made.
